How do you decide what to put in the transfer drawing?

ckutler, When I make a template for transferring detail to the master support (paper) I only add just enough detail to help me keep the proportions and certain details in their correct place. 

Many times for my own paintings I don't need a template as I draw freehand directly onto the paper.

In the classes I mostly add a template I as I'm more concerned in teaching the painting techniques as to the actual drawing side -  for this we have the excellent Let's Draw course.
